Cucumber, Basil and Mint Soup

Instructions

  1. Pulse the cucumber, sour cream, basil, mint, scallion and water until combined, but still slightly chunky. Add lemon juice and hot sauce, season to taste. Refrigerate 3 hours.
  2. Plate, garnish with additional thin-sliced cucumber, and serve.
