Cucumber, Basil and Mint Soup
serves 4
Ingredients
- 1 ea English cucumber, peeled, seeded and chopped
- 1 C sour cream
- 1/2 C fresh basil
- 1/2 C mint
- 1/4 C scallion, chopped
- 1 C water
- 1 T lemon juice
- 1/2 t hot sauce
Instructions
- Pulse the cucumber, sour cream, basil, mint, scallion and water until combined, but still slightly chunky. Add lemon juice and hot sauce, season to taste. Refrigerate 3 hours.
- Plate, garnish with additional thin-sliced cucumber, and serve.
